Fighting an opponent with a knife is foolish. Forget what
you see in the movies. Run instead. In all likelihood you're
going to get cut. But if you do get trapped in a bad
situation, we teach students how to disarm opponents by
torquing the wrist with one hand and using the flat of
the blade against the forearm with the other. This pushes
the knife against the thumb and out of the hand.

A little Filipino gunting. This is a destruction technique that
smashes the opponents knife hand with the elbow. A damaged
limb makes it more difficult for your opponent to continue
fighting. In Kali, targets of opportunity are the best targets.
When a punch or kick is thrown at you, attack the attacking
limb. A broken hand or foot is tough to ignore.
